What can I use instead of eggs?
Use 1 medium mashed banana OR half cup of oats mixed with a little warm water. You can also take out the eggs altogether and use 1/2 of the can of coconut cream.
Can I change out the coconut cream?
Yes you can use yogurt instead. Please don’t use milk! Use a low sugar yogurt.
Can I make a half mix?
Yes you can use half the bag. Just halve the ingredients (1 egg + 1/2 can coconut cream) and use a smaller bowl to mix.
Reseal your bag of muffin mix and keep in a cool dry place or in the fridge.
